Scones
350g self raising flour, 75g butter cubed, 4tbl spn sugar, 1tbl spn salt, 1 tspn baking powder, 150g natural yoghurt, 4tbl spn milk, 1 egg to glaze. Raisins if you like.
Add flour, salt, sugar baking powder to a bowl
Add butter and get your fingers in the bowl and rub till its well mixed
Warm milk and yoghurt in the microwave for 1 min
Add this to your dry mix and blend in quickly using a butter knife.
Once you have a dough cut into small rounds. Fold in some raisins if you like
Glaze them with an egg and bake for 15mins on 170 deg.
Jam and cream to serve (and a cup of tea)

Pan fried tuna steak with a medi style tomato sauce
In a pan went some chopped tomatoe, a hand ful of prawns and some dried italian herb.
Soften up some diced onion and mushroom in some hot olive oil. Added these to the sauce.
Flash fried the tuna steaks for about a minute and a half each side.
Start to finish 15mins.
Delicious.
Homemade pizza night
Made a few home made pizzas for friends...went down a treat, especially the thin crust honey caramalised onion garlic bread.

3 duck egg omlette
3 duck eggs,smidge of milk, salt, pepper. Fy it up with mushroom honey roast ham and melt some cheese ontop

Vietnamese Cobbler
I've read a lot on this inter web about how people have fell ill after eating it and that its from the way they farm it...but i think that's, well, just a load of old cobblers.....
The only advice I got on this fish was 'throw it to the seagulls'.....
Tonight I pan fried the fish and served with a prawn, chorizo and tomato sauce. On the side I had a fair sized scoop of Moroccan style couscous.
For the sauce I placed in a pan 1 tin of chopped tomatoes,, 4 cut up slices of Chorizo, 3 diced fresh tomatoes, half a blitzed onion, 1 clove of garlic (using a blender into a puree) and some Italian dried herbs.
I brought this to a simmer.
I lightly dusted the fish fillets in flour and pan fried them in olive oil for about 5 mins a side.
Just as the fish was ready I blitzed the sauce with the hand blender and added some fresh prawns (or shrimps)
The plate it up and enjoy. Was quite a light dinner and full of goodness!

Two Dippy-duck eggs for breakfast. I prefer Duck eggs to hens eggs (if i can get them). There have more taste and the yolks are bigger and more colourful.
....and you cant have a dippy egg without soldiers.....

Ray wings are peculiar things!
On tonight's menu... Ray, oven baked with a honey and onion glaze with a side of baby spinach and carrot/potato mash. I decided to stick with what I know and cook up a recipe that can complement any chunky slice of fish.
From the cupboard...
1 Onion (only me eating tonight)
2 cloves of garlic (will keep the vampires away)
Some runny honey
White wine vinegar
....and the fish of course (although that didn't live in my cupboard, that would just be silly)
Potatoes carrots and spinach for the side
I could have also done with a sprig of Thyme, a bay leave and some Rosemary...none of which i had....
Firstly I chopped up an onion into thin slices, loosely chopped 2 cloves of garlic. Then I fried these off until brownish and soft in some lovely olive oil.
At this point I also had my potatoes and carrots starting to soften and the spinach in another pan ready to do at the last minute
Add a splash of white wine vinegar let it sizzle.
Now add a good dollop of Honey (dependant on how sweet you want it) and let it go all runny and gooey. At this point I would ass the Herbs but as I didn't have any I did without.
So now I decided to trim the Fish just to make it a bit neater and get rid of some of the big bones ( I cant be bothered to be picking bones out/choking as I'm eating.
I scooped some of the honey drizzle onto the fish and rolled it up. The rest i left aside to put onto it later.
The rolled up fish was put in the oven and baked on 180-190 for about 20 mins.
With 5 mins to go i poured boiling water on the spinach and left to do its thing....I mashed the spuds and carrots....Bish bash bosh.
Plate the spinach up, at the mash on top, add the fish, finish with some of the left over sauce.....
Although it was very tasty ( I would expect anything less -ha) i would probably pick a less boney specimen next time such as Cod or another chunky fishy friend.

Ray Wings?
I was in my local supermarket yesterday and came across 'Ray Wings' on the fish counter...
I cant say I've ever had these and really know what to do with them, but I bought them neither the less..
