Add some Sole to your cooking

Lunch today:


Sole fillet poached in milk served with baby new boiled potatoes and baby leaf spinach.
(Prep and cook in 30mins)



what you need....

couple of fish fillets
1 cup milk (full fat, semi-normal or that other type will do)
1 knob of butter
1 tablespoon flour (for thickening...corn flour is best)
a small bunch of chopped parsley
sprinkling of salt/pepper to season
white pepper

How to make it...


Place your fish in a large frying pan (remember to switch on or you wont get anywhere)

Add milk.

Cover and bring to the boil.

Reduce heat and simmer gently for 10 minutes or until fish flakes.

Carefully lift fish from pan and keep in a warm oven

Add butter into to a different pan and melt.

Stir in flour and cook until frothy.  If too thick, thin out with a little milk, if too thin add a little flour....make sure you add flour slowly or you'll get lumps and bumps in your sauce.

Take the milk you poached the fish in and put it into the mix....stir it constantly and add your parsley.

Season with salt and pepper to taste.  Hey presto! sauce.

Pour sauce over fish.

Enjoy!!






...Im not going to tell you how to boil potatoes or cook spinach as if you've got to this point you are probably a culinary master!!
