Ray wings are peculiar things!

On tonight's menu... Ray, oven baked with a honey and onion glaze with a side of baby spinach and carrot/potato mash.  I decided to stick with what I know and cook up a recipe that can complement any chunky slice of fish.

From the cupboard...
1 Onion (only me eating tonight)
2 cloves of garlic (will keep the vampires away)
Some runny honey
White wine vinegar
....and the fish of course (although that didn't live in my cupboard, that would just be silly)
Potatoes carrots and spinach for the side
I could have also done with a sprig of Thyme, a bay leave and some Rosemary...none of which i had....  


Firstly I chopped up an onion into thin slices, loosely chopped 2 cloves of garlic.  Then I fried these off until brownish and soft in some lovely olive oil.

At this point I also had my potatoes and carrots starting to soften and the spinach in another pan ready to do at the last minute



Add a splash of white wine vinegar let it sizzle.

Now add a good dollop of Honey (dependant on how sweet you want it) and let it go all runny and gooey.  At this point I would ass the Herbs but as I didn't have any I did without.



So now I decided to trim the Fish just to make it a bit neater and get rid of some of the big bones ( I cant be bothered to be picking bones out/choking as I'm eating.




I scooped some of the honey drizzle onto the fish and rolled it up.  The rest i left aside to put onto it later.

The rolled up fish was put in the oven and baked on 180-190 for about 20 mins.

With 5 mins to go i poured boiling water on the spinach and left to do its thing....I mashed the spuds and carrots....Bish bash bosh.

Plate the spinach up, at the mash on top, add the fish, finish with some of the left over sauce.....




Although it was very tasty ( I would expect anything less -ha) i would probably pick a less boney specimen next time such as Cod or another chunky fishy friend.
