Constructing a curry from scratch can be quite easy. All you need is a bunch of herbs and spices and the meat of your choice. The end product will be much more tastier than the jar of pre-made sauce!....
So here is Corrie's Curry for tonight:
Lamb Rogan Josh, served with Pilau rice and garlic and coriander naan.
What you will need.... (this serves 4 or 1 very hungry curry lover - prep and cooking from start to finish approx 2hrs)
2 onions (chopped)#
3 cloves of garlic (chopped)
500g of meat (Lamb in this recipe)
300ml of chicken stock (use a stock cube - lets keep it simple)
Oil for frying
4 Cardamom pods
1 Cinnamom stick
2 tspn ground Cumin
2 tspn ground corriander
1 tspn chilli powder (or Garam masala - an indian mix spice)
1 tspn turmeric
4 tbspn natural yoghurt
1 tbspn tomato puree (something i forget so i just used ketchup - stay classy)
Additionally (for garlic an corriander naan)
Naan Bread
butter
2 crushed garlic cloves
sprinking of coriander leaf
Right here's what to do....
Whiz the onions and garlic into a purée using a hand blender (or if you don't have one chop them really fine)
Next heat the oil in a pan (that has a lid)
Add the Cinnamon stick and cardamom (let them sizzle, take a waff of the fragrance)
Add your onion and garlic, a pinch of salt and the tomato purée.
Once the onion is soft and golden add the lamb (or other meat)
Next whack in all the other spices...no particular order...give it a good stir around.
Add the chicken stock pop on the lid and bring to a nice simmer for 1hr 20min or however long it takes to be nicely cooked (Stir occasionally).....add the yoghurt at the end.
Rice
Make whichever rice you like!
Na Na Naaan!
For your naan breads....
In a small microwavable pot put a big lump of butter and microwave until melted (not too long though)
add the garlic and a sprinkle of coriander....
Now smear this all over your Naans (not your Nan - she wont appreciate it)....cook the bread as it says on the packet...
